  Materials: an octopus (preferably chilled), two green onions, eggs, a raw ginger , garlic, pepper grains, anise , cinnamon, oyster sauce, soy sauce , salt, flour, chicken powder, sugar, wine.

  Method: 1. Wash the octopus and cut into sections, add a little salt, appropriate amount of ginger slices, garlic slices, peppercorns, cooking wine, green onions, and marinate for about ten minutes.

  2. Beat one egg, put oil in a pan and heat until 50% hot, and coat the octopus with egg liquid.

  3. Fry the octopus in a frying pan, or it can be fried until golden brown.

  4. Remove the fried hairtail and set aside.

  5. Prepare the spices and cut the scallions into sections.

  6. Put an appropriate amount of oil in a separate oil pan, add the scallions, star anise, and cinnamon to a medium-low heat and fry them slowly.

  7. Fry until the surface of the green onion is golden, and remove the whole green onion.

  8. Put the peppercorns in the oil pan and sauté until fragrant, add appropriate amount of oyster sauce, soy sauce, a little sugar, and half a bowl of water.

  9. Pour the fried hairtail into the pot, stir gently and simmer for a few minutes.

  10. When the soup has thickened, use a little cornstarch to thicken the soup and season with chicken powder.

  This octopus is different from the pickled peppers that I often cook. It uses green onion oil. After cooking with oyster sauce, the scallions are very fragrant. The family likes it very much and it is simple. You can try it.
