The leaves of amaranth are oval or prismatic, the leaves are green or purple-red, the stem fiber is generally thick, and there will be scum when chewing. The amaranth has a soft body and a strong taste, sweet and fragrant in the mouth, and has the effect of moistening the intestines and stomach and clearing away heat. It is also known as “Mongkui”, “Ning Cai”, and “Ning Cai”.
