Chinese name:南豆腐

South tofu, also known as southern tofu , soft tofu , and soft tofu , refers to tofu made with gypsum as a coagulant. The texture is delicate, elastic and has a large water content. Therefore, southern tofu is very easy to break and is not suitable for stir-frying. It is mostly used to make soup and cold dishes .
