North Tofu

Chinese name:北豆腐

North tofu , food, soy milk is boiled and added with bittern to make it condense into a block, and a part of the water is removed. It has less water and is harder than southern tofu . Beitofu is also called brine tofu . As the name suggests, its forming agent is brine . Compared with southern tofu, the texture is firmer and the cut surface is not as smooth as southern tofu.
